Garlic Basil Pesto

Pesto is really easy to make. For equipment all you need is a strong blender/ chopper, both work. All ingredients can be optional except for the oil and basil o/r another herb.

Ingredients

Olive oil

Basil (best fresh not dryed)

2-3 Garlic cloves (best fresh cloves)

1 tsp Pine nuts or Walnuts

Parmesan Cheese

If your cheese is not yet grated, grate it or chop it in your blender. Remove from blender. Chop up nuts and garlic cloves in the blender with a bit of olive oil. Fill your grater with fresh basil and add 1/4-1/2 c olive oil. Blend and add oil as needed to moisten and more basil as desired (I usually use 1-2 bunches of basil from a store or about 3 cups of fresh leaves). Stir in grated chese (1/2-1 c) you until you get the consistency you like or add more olive oil as needed.

Other options

*Add parsley, sage, rosemary or other fresh herbs for additional flavoring

*Use other kinds of cheese or nuts

*Add a splash of balsamic vinegar (mmmmm tasty)

*Olive oil works best but adding a bit of walnut oil is a great way to get some different essential fatty acids into the recipe
